Super easy sweet potato chips! Slice with a mandolin required thickness and then fry in some good oil until crispy and golden brown and season with salt and pepper and voila!!! They do get crispier as they dry on the paper towel. Enjoy a quick yummy snack!!!
I have made a lemon meringue pie which is gluten free, refined sugar free, dairy free and completely paleo but tastes amazing!! When I first made it the filling was liquidy but I put it in the fridge thinking it was ruined and when I took it out the next day I noticed the filling at set and it looked and tasted amazing!! So I was thinking id like to try out some natural make up and natural beauty products along with safe products for the home and this is where my Hubby can shop for me or online. I do go to the grocery store but most trips out are quite quick so I don't have much time to look around especially with children. I will be looking online and trying out some natural beauty products because I notice I get reactions in my eyes from certain mascaras so it may be a good idea for me to try natural and gluten free products. I love Summer, it's my favourite season and Fall being second favourite. My Husband and I felt like a summer drink but without the alcohol. I had looked up a lot of drinks and they all contained lots of white sugar and heavy cream. I had coconut cream and pineapple juice and knew I could make a virgin piña colada. This drink screams summer and an exotic taste, such a refreshing drink. Here is my recipe, check it out and enjoy! 1 can of coconut milk ( I used Native Forest as it is half cream and half milk) 1 1/2 cups of pineapple juice 1/4 cup of honey 5 ice cubes Pour the coconut milk into the blender with the pineapple juice. Blend well. Add the honey and ice cubes and blend on ice cube option until well combined. Pour into glasses and add a slice of pineapple to dress your glass up. Enjoy!! Here is another summer drink which is my most favourite right now. Virgin strawberry daiquiri. 8 strawberries 1/4 cup of orange juice 6 ice cubes 1/4 cup of honey Juice of 1 lemon Makes two to four martini glasses Blend all ingredients in a blender. Pour into your glass and serve with a side of lime to garnish. I was craving something Mexican for dinner and I kept thinking what could I make that's different for a change and I thought of taco seasoned chicken breast topped with organic salsa and caramelized onions. Absolutely delicious!! You can add any sides you like to this main meal, we like potato salad in the summer. Although I try to make my own mayonnaise, sometimes I run out of olive oil and I just saw the other day Hellmanns mayonnaise made with olive oil. Yes it has canola oil in it also but sometimes when I have nothing else I end up using store bought and that's the same with ketchup too. I'm not perfect in the paleo diet when it comes to condiments, but I try my best. Try this recipe out and see what you think. 2 chicken breasts Taco seasoning (found in recipes) 1/2 a lime juice Organic salsa 1/2 a jar 1 onion shaved thinly Mix taco seasoning in a small bowl and stir. Place chicken in the bowl and mix them up with the spices until fully covered. Squeeze some lime juice over the chicken. Place the chicken in a pan and cook with some oil until cooked through. While the chicken is cooking shave the onion using a mandolin and place in a separate pan and sauté with some oil. Place the chicken on a plate and top with salsa and onions. Enjoy!! Summer is finally here and that makes me happy! I never liked granola bars especially the ones like nutrigrain bars. I don't know what it is about them I just don't like them, but I do like fruit and nut bars. When I saw the ingredients that most fruit and nut bars have in them it was insane, so I made my own and took out everything that I had in my cupboard that looked good for a fruit and nut bar. These bars are so good and sweet from the dates and fruit and a little nutty from the cashews and pecans. I am in love with these bars and i know you will like them too. I have to make another batch because the first batch went so fast. Give these a try and see what you think.
This fruit and nut bread is perfect for breakfast, snack or a quick lunch. I was craving this bread and i am so happy with how it turned out, I cant stop eating it. This is a gluten free refined sugar free, wheat free and dairy free bread just like all my other recipes on my blog. I hope you try this bread and let me know how it turns out for you. Everytime I make pizza crust I seem to do something different just so I can make it a better recipe. I wanted something for lunch today but I didn't know what and I was looking through my freezer and throwing some old food away that was freezer burnt and came across mini pizzas. I then knew what I wanted to create for lunch. I rarely used tapioca flour but recently I have found I am adding a bit here and there in batters and pizza dough. I don't use it in muffins or my other baked treats. It gives the good a more bread like Taste and a little fluffier if that's the right word. When I made these I used my pizza crust recipe that's on my blog as a guideline, I was going to just half the ingredients but I added the tapioca flour as an extra ingredient. You can add anything you like as a topping even cheese of you can tolerate it, just cook the toppings before you put them on the pizzas.
1 cup of almond flour 1/4 cup of coconut flour 1/4 tsp of baking soda 1 tbsp of cold water 2 tbsp Of palm shortening 2 tsp of apple cider vinegar 1 tsp of oregano 2 tbsp of tapioca or arrow root flour Use the dough attachment if you have a stand up mixer. Preheat oven to 350. Line a cookie sheet with parchment paper. Add the ingredients in order in the mixer and mix until combined. It will look a little crumbly until you add the water then It will look like soft dough. If you need to add a little more water you can do that. This dough is very easy to shape and hold together. Take a handful amount of dough and roll into a ball, actually you can make the pizzas any size you want but for mini ones I rolled a medium sized ball. Flatten in your palms and lay them on the baking sheet. With your fingers knead the dough into a pizza shape with a bit of a lip around the edge to form a crust. They will look like little shallow bowls. Cook in the oven for 15-20 minutes or until they are a slight golden brown. In the mean time you can cook your toppings and make your sauce. I have a pizza sauce recipe on my blog if you need one. If you put cheese on top you can place back in the oven for a minute. Enjoy! This is amazing my friends! Such a delicious batter for fish. My Husband caught some perch while ice fishing this winter so I took some out of the freezer to defrost. I needed a batter because we used to use fish crisp but I wanted a wheatfree kind so I came up with one of my own. You can really add any spices you want to the batter and can even make it a little spicy if you like.
1 cup of tapioca flour 1 1/2 tbsp of coconut flour 1 tsp oregano Pinch of salt and pepper 1/2 tsp of garlic powder 1/2 tsp of onion powder 3/4 cup of almond milk 1 egg About 4 cups of oil I use light tasting olive oil to fry with Any type of fish Have three bowls ready. Pour your oil into a deep large pan let heat on medium slowly. In one bowl add half the tapioca flour. In the second bowl add the egg and whisk. In the third bowl add the other half of tapioca flour, coconut flour, spices and almond milk. Whisk well until combined. If the batter needs a little more almond milk then add that too, it should be thick liquid. Dip the fish fillets one at a time into the dry tapioca flour then egg then batter. Do this for all the fillets and then dip one slowly using a ladle or fryer spoon into the oil that should be bubbly. Dip as many as you can fit into the oil. Let cook until the batter is crispy and golden brown. Spoon each piece out carefully and lay on paper towel on a plate to soak up any excess oil. Be very careful with hot oil around anyone or children. Make sure the oil pan is at the back of te stove. When all he fish is cooked turn the heat off and let the oil cool. Serve with a slice of lemon and chips. Enjoy!!! |
