4 eggs
1/4 cup of honey
1 tsp of vanilla extract
1/3 of a cup of palm shortening, melted
1 cup of cashews soaked more than 4 hours
2/3 of a cup of coconut milk
1 cup of raisins
1 1/4 cups of almond flour
3 tbsp of coconut flour
1/2 tsp of baking soda
pinch of salt
2 tbsp of cinnamon
3 tbsp of coconut sugar
3 tbsp of coconut butter
Preheat oven to 350'. Place a heatproof dish full of water on the bottom rack of the oven. This helps the bread to rise. Rinse the cashews. In a blender blend the cashews with the coconut milk. Set aside. Beat eggs in a stand up mixer. Add the vanilla and honey. Mix well. Add the melted palm shortening. Mix again. Add the cashew mixture to the stand up mixer and mix on low until combined. Add the raisins. Mix again. Add the almond flour and coconut flour. Mix again and scrape the sides down with a spatula. Add the baking soda and salt and mix one more time. Line a loaf pan with a piece of parchment paper that fits the bottom perfectly. Pour the mixture into the loaf pan. Smooth the top with a spatula. Mix the cinnamon and coconut sugar in a bowl. In a separate bowl melt the coconut butter for about ten seconds in the microwave. Mix the cinnamon and coconut sugar in with the coconut butter until combined. It will look crumbly. Pour this mix on top of the raisin bread. Swirl the cinnamon mix throughout the loaf so that it will be seen throughout the bread once its cooked. I used a metal skewer but if you have something similar use that. You can also use a thermometer point. Most of the cinnamon mixture will stay on top and that is fine, as long as some of it gets swirled into the rest of the bread mixture. Cook for 50 minutes or until thoroughly cooked through. I use a knife to poke the middle and if it comes out clean then its cooked. Take out of the oven when its cooked and let cool. Enjoy
I had thought about this bread for a few days now and ways that I could get the cinnamon and coconut sugar to swirl into the bread and I found a way and it worked out perfectly. This bread is so delicious, I absolutely love it and I know you will too.
