Good morning everyone! Well it's morning here in Canada and a beautiful one. Today I am finally going apple picking with my Sister and my nephew and I am excited. I am adding pumpkin pie muffins to my blog this morning because they are absolutely delicious and you must try them. Ok gotta run baby is on the move. 2 eggs 1 tsp of vanilla extract 1/4 cup of coconut sugar 1 1/2 cups of almond flour 1 tbsp of coconut flour 1/2 tsp of baking soda 1/4 cup of melted palm shortening 1 can of pumpkin purée. Preheat oven to 350. Beat the eggs with the vanilla. Add the coconut sugar and melted palm shortening and mix well. Add the pumpkin purée and mix. As the almond flour, coconut flour and baking soda and mix well. Scrape down the sides with a spatula. Spoon the mixture into cupcake liners and bake for 20 minutes. Let cool and enjoy! Recently I have seen my gi doctor and I had a cat scan which showed 5-6 cm of my small intestine inflamed. I had surgery years ago where 30cm of my small intestine was removed. I have not been on medication and it is to the point where we are now discussing options and having tests done to see the how bad the inflamation is. I am very afraid of being on meds because I am not hearing the greatest things about a few of the medications lately and that they are causing side effects and it scares me. I have this book which I had tried a long time ago but I want to try again. I'll do anything at this point to know what it's like to feel normal. This is the specific carbohydrate diet and I am going to attempt it again and I have to tell myself this time it's strict time, this time is the time to get it right! My computer wasn't cooperating with me tonight so I can post the pumpkin ice cream recipe on my phone but only in my blog area, tomorrow I will add it to my recipe list. This ice cream is so creamy and delicious and perfect dessert for Fall. Try this recipe out, you'll love it. Oh and it's egg free, dairy free and refined sugar free and so easy to make.
1 can of pure pumpkin purée 1 can of thick coconut milk 1/4 cup of honey 2 tbsp of coconut sugar 1 tsp of cinnamon 1 tsp of ground cloves 1 tsp of allspice 1/4 tsp of ginger Add all the ingredients to a blender and blend on low until it's all combined. Pour the mixture into your ice cream make and follow the directions of the manufactures Manuel. My ice cream maker stays in the freezer ( inside cylinder) all the time for times when I want to spontaneously make ice cream. Keep in the freezer if you haven't eaten it all, but I'm sure it'll be gone fast because it's so good. Enjoy I've been meaning to post this recipe of the strawberry almond milk. I recommend using a cheesecloth to squeeze the milk from the almonds at the end of the process. I used a strainer but I will use a cheese cloth next time. Here is the recipe 1 cup of soaked almonds 3 cups of water plus water to soak them in 5 strawberries chopped in half Cheesecloth or strainer Rinse the soaked almonds. Place in a blender with the 3 cups of water and blend on low. Add the chopped strawberries and blend again. Pour the mixture into a cheesecloth or something you can squeeze the almonds with. Squeeze as much milk as you can out of the almond meal. You should have about two milk bottles of milk. You can use your almond meal for dehydrating into granola or cereal. You maybe able to find other recipes for it's use to. Enjoy!! I made a roast chicken dinner last night and it was amazingly good. Very fallish! We had roast chicken with a homemade rub on it and on the side we had sweet potato, carrot onion garlic mash which Mike and I couldn't stop eating. My two little ones had broccoli and sweet potato chunks. My son likes to pretend the broccoli are trees, if that's what gets him to eat his veggies then trees it is. I am posting the mash here on my blog with the roast chicken and then I will add it to y list. 1 sweet potato peeled and cut into chunks 3 carrots peeled and cut into chunks 1 onion diced into small pieces 3 whole garlic cloves Pinch of salt and pepper Boil the sweet potato and carrots. Add the whole garlic cloves to the sweet potato pot. Sauté the onion in a separate pan. When the potato and carrots are soft add the onion and use a masher to mash it all together including the garlic in it. Add some salt a pepper as serve. Enjoy Roast chicken rub 1 tsp of oregano 1 tsp of Italian herbs 1 tsp of basil 1 tsp of ground bay leaves 2 tsp of paprika Salt and pepper 1 tbsp of olive oil 1 onion shredded Pour some olive oil over the chicken. Sprinkle all the spices on top and you can rub it in with your hands. Make sure to wash your hands right away. Add the onion around the chicken. Preheat oven to 350 and cook the chicken for an hour depending on the size of your Chicken it may be longer or less. Make sure it is cooked through and there is no trace of pink. Serve with your sides and enjoy. Oh and today I used my left overs for lettuce wraps and poured my French inspired dressing on them, it was delicious. I would like to share with you how to make the coconut cream that a lot of my recipes call for. It is so easy and I have provided a picture of the brand I use. I find this coconut milk the best one to make coconut cream with. Some brands are too watery or have too many other ingredients and doesn't make the cream as well, but this brand does and I really recommend it. I also use this brand in my coffee. Native forest organic coconut milk is the brand I use and when you place the can in the fridge over night or more than four hours it creates a thick cream on top and underneath the cream is the milk. The top layer of cream is what a lot of my recipes ask for when a thick cream is required. Here is a picture below of the brand. I buy this coconut milk at my local grocery store. I wanted to add to the post on coconut cream because I have another product that I use in a lot of my recipes and that is coconut sugar. Like I said before I went from three teaspoons of white refined sugar in my tea before I started to try and eat a paleo diet and I say try because I do struggle at times and there are a few foods I find hard to give up. My biggest is Indian food which I now order without the creamy sauce because that sauce kills my stomach, the local Indian restaurant is very accommodating to dietary needs. So I guess you could say that meal is almost paleo minus the rice I eat. No matter what I did with food, whether cutting sensitivities out and gluten I'm still sick as a dog most days and now I have said to myself I will continue cooking paleo meals, but I'm also going to treat myself to my most favourite meal and that would be Indian food even if I have had to modify it. Anyway back to he coconut sugar; I know this is still a type of sugar but it helped me transition into the paleo diet and helped me quit refined white sugar cold turkey. I use a little in my coffee and in my recipes. I posted on Instagram yesterday a picture of coconut sugar, I found it at my local Costco and it's a 4lb bag for $10.99. I have been buying 1lb bags for $6.99!! So when I saw this I bought it. Awesome deal!! So check your Costco out if you use this product. I have posted a picture below. Have an awesome night everyone. Fall is approaching and here in Canada Thanksgiving is early October and the weather is certainly feeling like Fall. To prepare myself I decided to create a few Fall recipes and I hope they help you get in that mood for the season. They are delicious and I am so happy with their turn out. Hot spiced apple cider and apple pie. These recipes are in my recipe list under the title "more" at the very bottom along with a few more Fall recipes I just added nut free chocolate chip muffins and they are amazing! I can't believe how good they are and I am excited that I have lots of nut free options to take to my school (job) and my Daughters school. You have to try them they are fluffy and a perfect texture. If anyone is wondering why my recipes are in one long list it is because this website won't let me add more titles otherwise I would have each recipe in a category like nut free. I am still new in the blogging world and I am trying my best to please everyone and in the future I will definitely be searching for a new site where I can have all my recipes organized much better.
