My children eat yoghurt especially my son who loves the greek type and I looked at the ingredients and the sugar content is high, so I thought I'll create my own. I have been craving some type of yoghurt or mousse lately and I'm not sure why and I also wanted to create something I can eat for breakfast. The container I used in the picture is one that my daughter has for a school snack and I saved it because it comes with a lid and I thought this would be perfect to take on the road as well.
Strawberry Noghurt
3 large strawberries
1 tsp honey
Coconut cream (can of coconut milk placed in fridge over night)
Place your mixer bowl and whisk attachment into the fridge for 15 min. Cut strawberries up and place in food processor. Add the honey and blend. Meanwhile take the coconut milk out of the fridge and spoon the cream into the cold mixer. Whisk on high until a whipped cream forms. Pour the strawberry puree into a dish or small container like above picture and top with the coconut cream. Serve.
Blueberry Noghurt
Do exactly the same process as above but instead of strawberries add blueberries with the honey.
Lime Noghurt
Do the same process with the coconut cream and then add 1/4 cup of lime juice and 1 tsp of honey.
Cherry Noghurt
Do the same process with the coconut cream and blend fresh cherries without seeds with 1 tsp honey.
