Mini donuts are delicious and oh so scrumptious and they are addictive, but full of sugar and wheat and everything else I can't eat. This morning I was really tempted by some mini donuts so I decided to create my own but I don't have a donut maker and I can't go out and buy another small appliance, I am running out of room in my kitchen. These little bites are so good and easy to make and eat, maybe too easy to eat he he.
2 eggs
1 tsp of vanilla extract
1/2 cup of honey
1/2 cup of palm shortening melted
1/3 cup of coconut milk, not thick
1 1/2 cups of almond flour
1 level tsp of coconut flour
pinch of nutmeg
1 tsp of baking soda
1 tsp of cinnamon
1 tbsp of coconut sugar
Preheat the oven to 350'. Place a heatproof dish full of water on the bottom rack. Beat the eggs in a stand up mixer. Add the vanilla and honey and mix. Add the melted palm shortening and mix again. Pour in the coconut milk and mix. Add the almond flour and mix well, scraping down the sides. Add the coconut flour and nutmeg and mix again. Add the baking soda and mix until combined. Pour the mixture into each mini muffin tray, only pouring 1/2 way up so that the batter can rise. Cook for 20 minutes. When they are ready let them cool. Some of mine rose over the tops so I scraped off the top with a knife. Use a flat plastic knife to slide the muffins out. In a bowl mix the coconut sugar and cinnamon together. Roll each donut muffin in the cinnamon and coconut sugar and serve. Enjoy.
