I have never had a mango dressing on my salad and I wanted to try to create one for dinner the other night. I had a mango that was ready to be eaten so I thought tonight's the night ill try the dressing. It turned out really good.
1 ripe mango
1/2 cup of olive oil ( light tasting )
2 tbsp of poppy seeds
1/4 cup of apple cider vinegar
1 tbsp of lemon juice
Cut the mango in half and then twist both halves so that they break apart, then spoon out the mango into your food processor. Blend mango on low speed and gradually add olive oil, lemon juice, vinegar and poppy seeds. Store into a dressing a bottle.
