I made ketchup this evening and I had some that didn't fit in the bottle I was using to store it so I decided to use it for my chicken. It became a creamy sauce that was absolutely delicious and my Husband loved it. You need to make the ketchup first for this meal, but hey this way you'll have some yummy homemade ketchup.
For the ketchup
1 can of tomato paste
1 can of tomato puree
1/4 cup of white vinegar
3 tbsp of coconut sugar
1/2 onion diced
1 garlic clove, crushed
1/2 tsp of allspice
1/4 tsp of ground cloves
2 tsp of olive oil
2 tbsp of honey
pinch of salt and pepper
Add the onion to a saucepan and fry until slightly brown. Add all the rest of the ingredients to saucepan and simmer and stir for 20 minutes. Take the ketchup mixture off the heat and let cool for half and hour. Pour the ketchup into a food processor and blend on low until the onions are combined with the mixture.
For the sauce
1 1/2 cups of ketchup ( Recipe above )
2 cloves of garlic crushed
1 heaping tbsp of coconut cream
1 tsp of apple cider vinegar
2 chicken breasts
1 onion, shaved using a mandolin
In a bowl add the ketchup left over about 1 1/2 cups. Add the coconut cream, garlic, apple cider vinegar and stir. Fry the chicken in some olive oil or coconut oil until they are slightly brown. Add the onion to the chicken and fry them as well. Add the sauce to the chicken and simmer on low until chicken is no longer pink and thoroughly cooked through. Serve with your favourite side dish. Enjoy
