My Husband loved these pancakes and he does not like regular flour pancakes. Try these pancakes you'll love them as they are refined sugar and wheat free.
3 eggs
1 tsp vanilla
1/4 cup of honey
1/2 cup of coconut milk
1 cup almond flour
1 tbsp of tapioca flour
1/4 tsp baking soda
pinch of salt
Mix the eggs in a stand up mixer. Add the vanilla and honey. Mix well. Add the coconut milk and mix. Add the almond flour, baking soda and salt. Combine well. Heat a frying pan or griddle with a teaspoon of coconut oil.Pour the pancake batter into the pan or onto the griddle and wait till the top bubbles a little, this means the bottom of the pancake is browned. Flip the pancake over and cook the other side. Serve with your favourite topping.
