When I bought my waffle maker I fell in love with it, but don't worry I wont be posting too many waffle recipes. So far I have made chocolate waffles and blueberry waffles and they were delicious. This recipe I had some peaches that needed to be used so I created a peach honey syrup and the taste was so good. Enjoy these waffles, I know you will.
3 eggs
1 tsp of vanilla extract
3 tbsp of honey
1 1/2 cups of almond flour
1 tbsp of melted coconut oil
1/2 cup of blueberries
1 cup of coconut milk
For the syrup
2 peeled and sliced peaches
1/4 cup of honey
1/4 cup of water
Preheat the waffle maker according to manufacturers instructions. To make the syrup place the ingredients in a saucepan and cook on medium heat until it gets thick. Stir it now and again. Beat the eggs in a stand up mixer. Add the vanilla and honey and mix well. Add the flour and mix again. Pour in the melted coconut oil and mix. Add the coconut milk and blueberries and mix well. Pour the batter into the waffle maker and follow the manufacturers instructions. Serve on a plate and pour the syrup onto the waffles. Enjoy.
