Seemed like a good time to make apple cider cookies and caramel in the middle is the best. These cookies are easy to make and taste yummy.
1 egg
1 tsp of vanilla
1 tbsp of palm shortening
1 tbsp of honey
1 1/2 cup of almond flour
1/2 tsp of baking soda
1/2 cup and 2 tbsp of apple cider
4 tbsp of coconut flour
1 tsp of cinnamon
1/4 tsp of cloves
1/4 tsp allspice
Caramel
1/2 cup of coconut sugar
2 tbsp of coconut cream
2 tsp of arrowroot flour
Preheat oven to 350. In a saucepan melt the coconut sugar and coconut cream. Sift the arrowroot flour into the mixture whisking at the same time. Keep whisking. Take of the heat when its thick. Let cool. Beat the egg. Add the vanilla and honey. Mix well. Add the melted palm shortening. Add the apple cider and mix. Add the almond flour and baking soda and mix really well. Add the coconut flour and spices. The mixture will look like dough. Soft but dough like. Line a baking sheet with parchment paper. Spoon a small amount into your hands and forma ball with the cookie dough. Flatten the cookie a little and form hole in the middle without going through the bottom. Take a small tsp of caramel and put a little dollop in the cookie hole. Fold over the sides of the dough to cover the caramel. Place on the baking sheet and flatten a little. Do this technique with all the cookies. Cook in the oven for 20 minutes or until a golden brown. Let cool. Enjoy!
