Hot cross buns are an old time favourite of mine from when I lived in England. So delicious and filled with currants and raisins and cranberries. They are perfect for eating on the go or having them sliced with butter or jam with tea. Yum!!
2 eggs
1/4 cup of honey
2 cups of almond flour
1/2 tsp of baking soda
1/4 cup of melted palm shortening
1/4 cup of currants
1/3 cup of sultana raisins
1/4 cup of cranberries dried
1/4 tsp of ground cloves
1/4 tsp of ground allspice
1 eggs for brushing pastry
Preheat oven to 335 degrees and place a dish of water on the bottom rack while the oven heats up. Beat the eggs. Add the honey and mix well. Add the melted palm shortening and mix. Add the almond flour and mix really well. Use a spatula to scrape down the sides. Take a small bit of pastry dough so you can use it to make your crosses on each bun and set aside. Add the spices and baking soda and mix. Add the currants, raisins and cranberries and mix well. Use your hands to form small to medium size buns and place on a cookie sheet lined with parchment paper. Don' t make the buns to big. Using the dough that you put aside, take little pieces and roll them into long pieces to form crosses over the each bun. brush the egg onto each one all over and place in the oven for 20-25 minutes or until cooked through and golden brown. Take them out of the oven and let cool, Enjoy.
