Yesterday morning I felt like something light and different. I had some fruit that needed to be used and thought of a fruit granola parfait. This light but filling breakfast can be enjoyed anytime of the day. This recipe makes for two parfaits.
1/2 can of coconut cream ( coconut milk thats been in the fridge)
1/2 cup of whole pecans ground up
1/4 cup of honey
2 tbsp hemp hearts
1 tsp vanilla
Mix the pecans, honey, vanilla and hemp hearts in a processor. Take a few spoonfuls of coconut cream into a bowl add the granola and then more coconut cream then top with granola and your favourite fruit. Enjoy your fruit parfait.
