Gingerbread men yayyyy! They make me think of Christmas and I love Christmas. It's almost end of October and I am now thinking of that wonderful time of year. I used to buy gingerbread men or cookies from our local coffee shop because they were so chewy and good, so recently I thought I have to make these Paleo so I can eat them and they turned out perfect. I actually made these twice and the first time round they didn't turn out into gingerbread men but more like cookies because I didn't have coconut flour and the consistency was wrong. This time I added the key ingredient being coconut flour and the dough was perfect. These gingerbread people are chewy and soft and oh so yummy. The key to chewy and soft texture if you like that is roll the dough a little thicker, if you like them crunchy then thinner dough will do that but they need less baking time. This recipe makes about 20-25 gingerbread men.
1 egg
1 tsp of vanilla extract
1/4 cup of honey
1/4 cup of melted palm shortening
1/3 cup of coconut sugar
1/3 cup of molasses all natural
6 tbsp of coconut flour
2 1/2 cups of almond flour
2 tsp of ginger
1/2 tsp of ground cloves
1/2 tsp of baking soda
1/2 tsp of allspice
Preheat oven to 350. Line a cookie sheet with parchment paper. Beat the egg in a stand up mixer or hand held. Add the vanilla and mix. Add the honey and mix. Pour the melted palm shortening in and mix well. Add the molasses and coconut sugar and mix well. Add the almond flour and mix really well and scrape down the sides with a spatula. Add in the coconut flour and spices and baking soda and mix well until it starts to look thick and look like dough. It'll look shiny and you need to use a spatula to scrape the sides to form a ball of dough. Place a piece of parchment paper on a flat surface. Take the dough out and using your hands form a ball. Place the dough on the parchment paper and another large piece on top. Using a rolling pin, roll the dough out to your preferred cookie thickness. It will roll out to a large circle. ( not a perfect circle) Don't make the dough thin, it should be a good thickness for thick cookies. Use your cookie cutter to make the gingerbread men or shapes. To peel them off the paper you can use the tip of a knife or spatula. I used the cookie cutter. Place them on the baking sheet and cook for 10 minutes or until they are a golden brown. if your cookies are a medium thickness then that will be the right amount of baking time, if they are thin then 5 minutes. Each batch you will have extra dough so you can form a ball again and roll it out to make more cookies. Keep doing this until you have no more dough left. Let them cool and decorate however you prefer. I do have an icing recipe which is under Halloween cookies if you'd like to try. Enjoy. Let the cookies cool before you place icing on them.
