I love date squares, always have along side eccles cakes. Anything with that type of taste like dates I enjoyed. These dates turned out amazing, better than i thought. I actually thought they were a fail only with texture, the taste was awesome, but once I placed them in the fridge they set perfectly. so here are my date squares and I hope you enjoy them as much as I do.
Date filling
2 1/2 cups of dates. Soak these previously in warm water for 15 min.
1 cup of water
1 tsp of lemon juice
2 tbsp of coconut sugar
Crumble
1 1/2 cups and 1 tbsp of almond flour
1 cup of coconut sugar
1 cup of palm shortening
1 tbsp of shredded coconut for topping
Preheat oven to 350' . Line a 9x9 dish with parchment paper to fit exactly. In a saucepan place the date filling ingredients and simmer until the mixture gets thick and the water is soaked up. Use a potato masher to mash the dates a little. To make the crumble add the crumble ingredients to a stand up mixer and mix on medium speed so that the crumble literally looks like crumble and is well mixed together. Pour half the crumble mixture into the dish and flatten with a spoon so it is evened out. Pour the date mixture on top and spread it out evenly. Pour the rest of the crumble on top and spread that out evenly also. Place in the oven for 15 minutes or until slightly brown. Take out of the oven and let them cool. Use a knife to section off the squares equally. Place in the fridge for an hour and let them set. Enjoy.
