I love these little bite size macaroons, they are tasty, soft and hits the spot for sweetness. I wanted something I could just pick up from a plate and snack when hanging around the house and these were a perfect idea for just that. My Sister came over yesterday and the macaroons are now gone, she loved them. I hope you enjoy eating them too.
1 egg white
2/3 cup of almond flour
2 tsp vanilla extract
2 1/2 cups of shredded coconut ( sweet or unsweetened ) you can add another half a cup of coconut if you want more or it needs binding more
1/2 cup of coconut milk
1/4 cup of honey
Preheat the oven to 350'. Add the almond flour, coconut to the mixer. Add the coconut milk, honey, vanilla and mix well. The mixture should be somewhat soft and easy to form into balls. Use a spoon or hands to form a small ball with a peak and place each on on a baking sheet lined with parchment paper. Cook for ten minutes or until slightly golden brown. Take them out of the oven and let them cool. Enjoy.
