Shepherds pie is my all time favourite meal but the one I used to eat had mashed white potato on top covered in cheese. Although I can still and do eat potato and cheese in moderation, I felt like I needed some sweet potato in a meal today so I decided to make shepherds pie. It tasted so good that I had seconds. This recipe is so quick and easy.
3 large sweet potatoes peeled chopped into smaller pieces
1lb of ground beef
1 onion diced
3 carrots cooked and diced
1/2 cup of peas
1/4 cup of beef broth
1/4 tsp of rosemary ground
salt and pepper
Cook the ground beef in a frying pan or deep pan. Use a spatula to break up the beef into smaller pieces. Add the chopped onion and saute onion until it is cooked. Add the peas and carrots, beef broth and rosemary. In the meantime boil or steam the sweet potatoes until they are soft. when they are cooked drain in a strainer and use a masher to mash the potato. Pour the ground beef mixture into a 9x13 dish and top with the sweet potato and spread it evenly. Serve and Enjoy
