These cookies are yummy and it's getting around that time for love and Valentine treats. So here are thee super easy cookies to make.
2 eggs
1 tsp of vanilla extract
1/4 cup of honey
1/4 cup of melted palm shortening
2 1/4 cups of almond flour
2 tbsp of coconut flour
pinch of salt
2 tbsp of strawberry or raspberry jam; homemade or organic. I used organic
Preheat the oven to 350. Beat the eggs in a stand up mixer. Add the vanilla and mix. Add the honey and mix again. Add the melted palm shortening and mix again. Add the almond flour and mix. Pour in the coconut flour and salt and mix well. Scrape down the sides of the bowl if needed. The mixture should look like dough. Using your hands roll the dough into a ball. Place a sheet of parchment paper on a flat surface and place the ball of dough on top. Place another sheet of paper on top of the dough. Use a rolling pin to roll the dough out to a medium thickness. Use a large cookie cutter to cut circles. Use a small heart shape cookie cutter to make the heart in the middle of half the cookies. Use a knife to take the heart center out. Spread the jam on the other half of the circles. spread all the way to the edge. Place the top cookie with the heart shape hole in it on top of the jam carefully. Do this for your entire pastry. Tear the rest of the dough away and you can use it to keep making cookies. Place the cookies carefully using a spatula onto a lined baking sheet. Bake for 7-8 minutes or until cooked. Let them cool and enjoy.
