I have to say these brownies are amazing, absolutely amazing. I can't get enough of them, I think I'll be making another batch of these very soon because they are disappearing fast. They are very easy to make as well and don't take long to cook. I made these brownies while my son did some crafts and then he had a yummy treat for when he was done his dragon craft. Here is the recipe, have fun making them and eating them.
3 eggs
1 tsp of vanilla extract
1/2 cup of melted palm shortening
1 cup of coconut sugar ( I use wholesome sweetners brand)
1 1/4 cups of almond flour
1/4 cup of coconut flour
3/4 tsp of baking soda
2 tbsp of boiling water
Preheat the oven to 350'. Beat the eggs in a stand up mixer and add the vanilla. Mix well. Add the melted palm shortening and mix well. Add the coconut sugar and mix well. Add the almond flour and coconut flour and mix again. Add the baking soda and mix. Pour in the boiling water and mix again. Use a spatula to scrap down the sides. Line a 9x13 dish with parchment paper to fix exactly. Pour in the mixture and spread evenly. Place in the oven for 25 minutes until cooked through. You can check to see if the brownies are cooked by inserting a clean knife or small spoke and if it comes out clean then its cooked. Use a silicone spatula to loosen the sides. Let cool for ten minutes. Use a smooth knife to cut the brownies into squares and then serve. Enjoy.
