This is a meal that we have at least twice a month on a Sunday. It is delicious and amazing smell in the house, very Autumn meal. This rub is so good on a whole chicken and you can make my sweet potato mash to go with it.
Roast chicken rub
1 tsp of oregano
1 tsp of Italian herbs
1 tsp of basil
1 tsp of ground bay leaves
2 tsp of paprika
Salt and pepper
1 tbsp of olive oil
1 onion shredded
Pour some olive oil over the chicken. Sprinkle all the spices on top and you can rub it in with your hands. Make sure to wash your hands right away. Add the onion around the chicken. Preheat oven to 350 and cook the chicken for an hour depending on the size of your Chicken it may be longer or less. Make sure it is cooked through and there is no trace of pink. Serve with your sides and enjoy. Oh and today I used my left overs for lettuce wraps and poured my French inspired dressing on them, it was delicious.
