These cabbage rolls are delicious and they are tomato free. I cannot eat tomatoes right now so I used what I had in my fridge to make the sauce and it turned out better than I expected. You can pre boil the cabbage leaves if you prefer and let them cool and then carefully wrap the meat inside. For me I cooked the cabbage in the oven because knowing me I would probably rip the leaves. This recipe gets you to cook them in the oven because this is how I made this batch. 12 cabbage leaves red or green 1lb of ground beef 1 green zucchini, diced 1 onion diced 2 cloves of garlic, crushed 4 fresh basil leaves 1 tsp of fresh or dried Italian herbs 1 tsp of fresh or dried oregano pinch of salt and pepper 1 1/2 cups of chicken broth to pour in dish for the sauce 1 yellow pepper, chopped large pieces 1 green pepper, chopped large pieces 1 summer squash, sliced 3 tbsp of chicken broth Preheat the oven to 350F. Fry the sauce ingredients until they are soft. At the same time fry the onion, green zucchini and garlic in a separate frying pan until soft. Add the ground beef and cook until brown. Add the herbs and salt and pepper. Place the sauce vegetables into the large bowl of a food processor and blend on low. Add the 3 tbsp of chicken broth. Blend until combined. Pour the sauce into the beef pan. Mix well on low heat. Have your cabbage leaves ready by carefully removing each leaf from the cabbage core from the outside. Wash the leaves and pat dry with paper towel. Lay the leaves out in the oven proof casserole dish 9x13. Spoon about two large spoonfuls into the leaves one at a time. Fold over reach side of the cabbage leaves. Use toothpicks to keep the leaves closed. Do this for each one. Pour 1 1/4 cups of chicken broth in the bottom of the dish so that the cabbage leaves have liquid to cook in. Cook in the oven for about an hour. I turned mine over half way so that they didn't get too crispy on one side. You can do this by using a wide spatula and push the toothpick through or take them out. Cook until the cabbage is soft. |
