Oh my gosh!!! Yup this is exactly what it says. GOOEY CARAMEL PECAN PIE CHEESECAKE!!! Absolutely amazingly delicious. Now go make it!!!
Pastry
1 egg
1 tsp of vanilla
1/3 cup of honey
pinch of salt
2 cups of almond flour
2 tbsps of coconut flour
1 tsp of apple cider vinegar
Cheesecake
2 cups of soaked cashews
1/2 can of thick coconut milk
1 tsp of vanilla extract
Caramel
1 cup of coconut sugar
1 1/2 cans of coconut milk
1 cup Pecans
Preheat the oven to 350. Beat the eggs in a mixer. Add the vanilla and mix. Add the honey and mix again. Add the almond flour and salt and mix well. Add the vinegar and combine. Add the coconut flour and mix well. The mixture should look thick and almost like dough. Using a spatula scrape the sides into into a big ball. Place the dough onto a piece of parchment paper and then another piece on top of the dough. Using a rolling pin roll the dough out to the size of your dish. Grease the pie dish with a little palm shortening. Flip the parchment paper over so that the dough is now on the dish. Carefully lift the edges up so that the air is released underneath from air bubbles. Using your fingers knead the dough into place to fit the dish perfectly and then trim off any dough handing from the edge. Place in the oven for nine minutes or until slightly brown. Let the pie shell cool.
To make the cheesecake part rinse the soaked cashews. Place them in the blender with the coconut milk and vanilla. Blend until completely ground down and thick. Pour the cashew mix into the cooled pie shell and place in the freezer for two hours. To make the caramel place the coconut sugar and milk in a saucepan and stir. Let simmer for ten minutes until caramel becomes slightly thick. Let cool a little and pour into a container or bowl and place in the fridge for an hour. The caramel will be thick after being in the fridge. Take the pie out of the freezer and pour the caramel on top of the cheesecake and then sprinkle the pecans evenly on top. Serve right away or place in the fridge. When you slice the pie, slightly ease the pastry away from the dish and use a pie server to remove the slices. Enjoy
