So one of my first recipes was spaghetti sauce with spaghetti squash in place of pasta. I cooked this dinner with my baby in my sling and my son running around waiting for dinner and my daughter took a picture of me juggling baby and dinner. I had never had spaghetti squash before so this was a first and I really enjoyed it.
Sauce:
1 onion diced
1 clove of garlic crushed
1 zucchini diced
1/2 cup of mushrooms sliced
1 red pepper diced
1 green pepper diced
1 can of tomatoes diced no salt added
1/2 can of tomato puree
1/2 tsp of Italian herbs
1/2 tsp of basil
1/2 tsp of oregano
pinch of salt and pepper
spaghetti squash
Preheat oven at 350', place spaghetti squash in oven to soften for 10 min. try 5 min longer if needs be then cut in half using a knife safely. place in a 9x13" dish with a little bit of water in the bottom. Place spaghetti squash open halves down in oven for 45 min. When done scrape the inside with a fork lengthwise so it looks like spaghetti and serve with your sauce. Meanwhile fry onion and garlic and zuchinni and peppers until soft, then add mushrooms. When mushrooms look soft add the can of tomatoes and puree and spices, simmer for ten min.You can actually make this in the slow cooker and cook for a couple of hours to allow ingredients to settle. Add cheese if you can tolerate cheese and serve. Enjoy!!!
