Good evening everyone. My 11 month old baby girl Layla has been waking quite a lot at night so I haven't been able to post recipes on my blog, but tonight I have posted. On Monday I have my first Remecade infusion for Crohns and I am so nervous. It's the thought of sitting for three hours while medication runs through me, this scares me but the thought of being sick with diahrea everyday scares me more and I need to finally make a change. Although the paleo diet has helped me a lot, I still get diahrea most days. What I have noticed is if I eat anything with gluten or I eat too much rice I become very very bloated to the point where I look about 4 months pregnant. I heard this is called gluten baby. I hate it when it happens and I am trying not to slip up, but its very hard around holiday time like Halloween and there's lots of chocolates and candies. I am human I can't help it. lol. Saying this though I don't want that bloated belly back so I am trying very hard to stick with it. Anyway, I have posted three recipes to my recipe list. This past few months my baby girl has been teething so getting recipes or blogging on my website seems to get difficult at times so I apologize for that but these things happen. So if I can't post the recipe in my recipe pages I add them to my blog on my phone and later I add them to a main recipe page. Today I made gingerbread bites like mini muffins. They are delicious and gone in seconds. They are literally a bite size but so yummy. You will love them.
1 egg 2 tbsp palm shortening melted 1/4 cup of coconut sugar 1/4 cup of baking soda 1 cup of almond flour 1 tsp of ginger 1/2 tsp of allspice 1/2 tsp of ground cloves 1/2 tsp of cinnamon 1/2 cup of coconut milk Preheat the oven to 350. Add a dish full of water on the bottom rack in the oven. Beat the egg in a stand up mixer. Add the coconut sugar and palm shortening and mix really well. Add the almond flour ad baking soda and mix. Add the spices and mix again, use a spatula to scrape down the sides. Pour in the coconut milk and mix well. Fill a mini muffin tray with mini cupcake liners. Use a teaspoon to spoon the mixture into each liner about half way up. Cook for 25 minutes checking on them at 15 minutes or until cooked through. Let them cool and enjoy. I said I would post two recipes tonight that being tangy sweet meatballs and pumpkin apple squares but we've had a busy tiring night and I've decided I need to relax so I promise I will post these recipes tomorrow. I will add my dessert recipe that we had last night which were baked apples stuffed with sultana raisins, maple syrup and coconut sugar. They were delicious. Core the apples and make the hole a little bigger. Stuff with these ingredients mentioned and bake in he oven for 30 minutes in a oven proof dish at 350 degrees. Let cool a little an serve. There will be a little syrup in the bottom of the dish you can drizzle it over the apples like I did. Yummy! Enjoy My mum makes the best mince pies in the world! When she makes them I can't stop eating them, they are delicious and my favourite Christmas treat. I decided to make my own for once but paleo style. They turned out great and my Husband loves them and he isn't a mince pie fan. So I will definitely be posting the recipe very soon I promise. Here is a picture just to tease you and show you that you can still enjoy favourite foods. Every year around this time and at Christmas my mum used to get my siblings and I to cover oranges with whole cloves and then wrap ribbon around them and hang them on the tree. I have kept this as a tradition, but this year I am starting them early and I will place them in a bowl in my kitchen because the smell is so good. Just becareful because when the bulbs at the top of the clove falls out it becomes sharp and will hurt your thumb when pushing the clove into the orange. I would suggest kids and adults wear a thin glove so that your thumbs are padded and it won't hurt so much. It's fun to make and I find it very therapeutic as I don't usually get to sit down for long in my house and when I make these it's calming. You only need largel oranges, a bag of whole cloves and And any colour ribbon you like. When you wrap the ribbon around the finished orange wrap it so there are four pieces around and it will hang nicely. Here is a picture of one of my oranges I started! Have a great night everyone I made the most awesome jalapeño dressing tonight and I mixed Half of it in potato salad. I've have read lately that white potatoes have become part of the paleo diet and I had to have potato salad tonight but without the mayonnaise. I made my own mayonnaise and mixed it with cashews that I had previously soaked. With a little bit of spice form the jalpeno I added it was really good and I just had to share right now so I am doing his on my phone. You just try this out
1 1/2 cups of soaked cashews 1/2 a large jalapeño pepper and use a few of the seeds as that is where the spice is if you like it spicy. I have to add that as days pass the sauce gets spicier so if you don't like it spicy leave the seeds out 2 tsps of lemon juice 1/3 cup of water 2 cloves of crushed garlic 1 tsp of Italian herbs 1/2 tsp of salt Mayonnaise 2 eggs 1 tsp of vinegar 1 tsp of lemon juice 1 cup of light tasting olive oil Rinse the cashews and place in a blender. Mix the mayonnaise ingredients except the olive oil in a food processor until it's thick like mayo. Add the olive oil, drops at first while the food processor is on low. Gradually add the oil faster until it's all gone. Pour the mayonnaise into the cashew mix and blend on low. Add a tsp of olive oil and the jalapeño pepper, lemon juice, garlic, herbs and salt and blend again until the dressing is smooth and creamy. Wash your hands right away so that you don't have jalpeno pepper on your hands. Serve the dressing on potato salad or any green salad you prefer. I will be using my left over dressing on some chicken the next day. I'm just going to jump right into this. I recently went to visit my gastrointestinal doctor to discuss my health (crohns). I have gone seven years without medication, but those seven years I had symptoms almost everyday and it became my way of life, my norm as they say. I didn't know what was normal, but I have gotten to the point in my life with three children that I can't do this anymore. I started the paleo diet back in February 2014 and it worked right away for six weeks diahrea free. After that it went down hill because of food sensitivities as I was told by my naturopath. My list was so long I couldn't keep up. I carried on eating this healthy way but felt sick everyday and it became upsetting for me and hard for my family. I can't leave my house without having diahrea so I have to make sure there is a bathroom where ever I go and this becomes stressful and I worry which makes my stomach even worse. My cat scan showed 5-6 cm of inflammation and I thank God it's not any more than that. I trust that everything is in Gods hands and things will work out for the best. I will be starting a steroid for a few months to take the inflammation away and then on Remecade which is through iv. I am very nervous about all this as this will be the first time trying medication. Lots to think about and many more tests to be done. I know there is hope and strength at the end of it all and I hope for any one else with health issues that they also find comfort in what ever they decide. I wish everyone a great weekend and Happy Thanksgiving Canada I would like to give a few tips on a few recipes just in case one is not working out for you. I try my best to make my recipes easy to follow and if something is changed or substituted by you then I would hope it still turns out amazing. First thing I recommend is when baking the paleo banana bread or any of my bread recipes use a metal loaf pan not glass. I've never used glass with my recipes. I once used one before paleo and the bread did not turn out how it was supposed to. A metal loaf pan makes for a much better bread. Another tip is use the best almond flour you can find and that is affordable. Bob red mill almond flour did not work well for me in the beginning of my paleo cooking. All of my baking did not rise properly and I found nuts.com and their almond flour is super fine and I love it. Next tip would be to follow the directions for each recipe exactly as it says so that it turns out perfectly. Measure exactly what the recipe calls for. Another tip I just thought of when I bake and I want it to rise I place a dish of water on the bottom rack while the oven heats up, this will help your food to rise. So these are a few tips that I suggest for you, I hope they are helpful. Tonight I will be writing about ways to save money when eating the healthy way and what the best tips are when buying food.
