I was looking for something more to snack on or for breakfast and I thought about how cereal looks. So I thought about small pieces of granola in almond milk. Well these granola balls turned out to be a good quick snack and I leave them in a bowl on the counter and my family like to grab one or two as they walk by the bowl. You can eat these with milk and make the size smaller.
1 cup of honey
1/3 cup cashews
1/3 cup pecans
1/3 cup almonds
2 tbsp dried blueberries
1 tsp cinnamon
Grind the nuts in a coffee grinder or blender. If a coffee grinder was used pour them into a food processor and add the honey and cinnamon and blueberries. Process on low for a few minutes until it starts to form a ball. Spoon small balls and roll in your hands and place in a food dehydrator set at 120'. You can also use your oven set at 160'. Check on the granola after an hour then two hours if using the oven, turn the oven off and let them sit for 45 min. If they aren't slightly hard or dry then keep them in for another half hour. If you can keep the oven door open a little then do that but if not due to children like mine running around then try to open it now and again for moisture. In the dehydrator leave the granola for 24 hours and they should taste great at the end of it.
