These mini stuffed mushrooms are a perfect appetizer to serve at any type of party. I am creating more and more appetizers for parties as I find that is the hardest time for me, so it's nice to be able to bring or serve an appetizer that I can eat at a get together.
4 slices of cooked bacon diced into small pieces
2 packages of cremini mushrooms washed
1 cup of soaked cashews
2 cloves of crushed garlic
1/2 an onion diced
pinch of salt and pepper
1/4 tsp of chilli powder
1 tsp of chopped chives fresh
Cook the bacon. Preheat the over to 350. Line a baking sheet with parchment paper. Clean the mushrooms. Take the stalks of the mushrooms very carefully so it leaves a hole underneath the mushroom. Use the tip of a sharp knife and scrape very gently around the middle of the mushroom where the "membrane" is. ( the Dark part) this is so you have a wider dip in the mushroom for your filling. Rinse the cashews and blend on low until they are finely ground. You may need to add 1 tsp of water. Cook the onion and garlic together. In a separate bowl mix the bacon pieces, onion and garlic with the cashew mix. The mixture should be thick. Slice a thin slice off the tops of the mushrooms so that they can sit flat and upright on the baking sheet. Add a small spoonful to each mushroom. Once they are all filled place them in the oven for five minutes. Take them out and top each one with the chives. Serve and enjoy
