I I made this meal thinking it won't turn out, but I was very surprised to find that it was delicious. My baby girl Layla loved it especially with zucchini noodles. You and your family will love it. It's also easy and quick to make. You will need a spiralizer if you make it with zucchini noodles.
2 chicken breasts skinless boneless
2 zucchinis peeled
1 cup of almond milk
1 cup of cashews
2 cups of spinach
1/4 cup of fresh basil leaves
1 large clove of garlic crushed
salt and pepper a pinch
Saute the chicken breasts in a frying pan. Add the basil leaves, garlic and spinach. In a blender blend the almond milk with the cashews until thick and creamy and the cashews are ground down. Pour the cashew mix into the frying pan and stir. Using a spiralizer spiralalize your zucchinis and add to the frying pan mixing with the sauce. Saute until slightly cooked and the chicken is cooked thoroughly through. Serve and enjoy!!
