To be honest when I first made cauli rice I wasn't sure if I liked it on its own, it does take getting used to, but when I made this Mexican cauli rice side dish, I fell in love with it. With all the flavours it tasted so good and now I want this for my side dish all the time. I made this for my family as I am trying to stay away from tomatoes, but I had to taste test and I approved. I added a full can of diced tomatoes but you can add half a can if you prefer. Here is my recipe.
1 cauliflower head
1 green zucchini, diced
1 red pepper, diced
1 onion, diced
2 cloves of garlic, crushed
1 or 1/2 can of diced tomatoes
1 lime juice
1 tsp of chilli powder
1 tsp of cayenne powder
pinch of salt and pepper
Clean the cauliflower and remove all the leaves and cut off the stump. Cut the cauliflower into small trees. Place the grater attachment onto your food processor, follow manufacturer instructions. Turn the food processor on low and add the cauliflower slowly in to the top opening of your processor and push down on the cauliflower with the plastic attachment that fits into that opening. You will see the cauliflower ground up and look like rice. Fry the zucchini, pepper, onion, cauliflower and garlic until soft then add the tomatoes, lime juice and spices. Stir well. Cook until all ingredients are a little soft and serve with your meal. Enjoy
