Tasty breakfast burrito for this mornings meal.

Burrito
1 red pepper, diced
1 yellow pepper, diced
3 eggs
4 slices of bacon
1 shallot, diced
Avocado paste
1 avocado
1 garlic clove
2 tsp apple cider vinegar
pinch of salt
pinch of red pepper flakes
small pinch of chilli pepper
For the crepes heat a frying pan or crepe maker with 1 tbsp coconut oil. Add the all the crepe ingredients into a stand up mixer or a bowl and whisk together. Once the pan is heated pour the batter into the pan leaving enough room on the outside to flip the crepe. When you see the crepe bubble a little on the top its time to flip it. I'm not the greatest crepe flipper so if you have a technique then use yours. Set the crepes on a warm plate.
For the burrito mixture fry the peppers, onion and bacon. I actually cooked the bacon separately and then diced it. Meanwhile scramble the eggs in another pan. Once the eggs are ready you can add them to the pepper mixture and then add the cooked, diced bacon to the eggs and peppers.
To make the avocado paste, scoop the avocado into a food processor with the crushed garlic, apple cider vinegar, chilli and pepper flakes and blend. Place your crepe open on a plate, use a spoon to spread the avocado onto the crepe, then add the pepper mixture and fold you crepe over from both sides. Enjoy.
