I have noticed that gummies has been looked up on my blog a number of times so I thought I'd post it again and add it to the recipe list. This is a recipe I go back to a lot. Tonight I made more gummies so I thought I would share again. 1/2 cup and 1 tbsp of cold water Well my friends I have been sick this past week and I actually thought I had been under the radar hidden from the nasty cold, but I finally got it along with my two youngest who are also sick. Having a cold and getting up in the night with children really wears on a person so I'm so thankful for my Husband Mike who has helped me so much. I haven't wanted to cook anything or bake but my son Owen asked for cookies and I didn't have any made and I haven't bought cookies from the store in almost a year, other than te baby arrow root kind. So I found a little energy to make some valentine cookies for him which he really enjoyed. Once I'm feeling better I'll be makin some more valentine treats and I will post my valentine cookie recipe very soon. Oh and just to add I have been using essential oils a cold blend that a friend gave me and it's really helping. Lemon and thyme is the one I have but she's sending me another one that's a different oil blend so I'm looking forward to using it. Have a great day! This is delicious, easy and quick to make. These are a must try. I made thee for my Sister, but my family have eaten most of them and I am going to have to make more, no ones complaining though he he. I made lemon poppy seed cupcakes today, they can be muffins as well of course without icing. They are delicious. I will share the recipe here on my blog and when I have the icing perfected I will post in the recipe list. 2 eggs 1/4 cup of argave syrup 1 tsp of vanilla extract 1 1/2 tbsp of poppy seeds 1/3 cup of melted palm shortening 1 cup of almond flour 1 cup of coconut milk 1 1/4 tsp of lemon juice 1/2 tsp lemon zest 1 tbsp of coconut flour 1/2 tsp of baking soda
Preheat oven to 335. Line a cupcake tray with liners in each holder. Place a dish of water on the bottom rack while the oven preheats. This will help with rising. Beat the eggs in a mixer. Add the vanilla. Mix. Add the melted palm shortening and argave syrup and mix well. Add the lemon juice and zest and mix well. Add the almond flour and mix. Add the coconut milk and mix well. Add the coconut flour and baking soda and poppy seeds. Mix. Scrape down the sides. Spoon about two spoonfuls into each cupcake liner. Place in the oven for 21 minutes or until cooked through. I need to perfect the icing as I found it wasn't sweet enough but you may like it so I'll post it an update later. 3/4 cups of palm shortening 1/4 cup of melted coconut butter 2 tbsp of honey 1 tsp of vanilla extract 1 1/2 tsp of lemon juice Colouring optional Place the palm shortening in a mixer and beat on high. Pour the vanilla in as the beater is going. Slow the beater down and add the honey and mix again on medium speed. Add the lemon juice and keep mixing. Add the melted coconut butter. You will notice it looks like icing and thicker. Add colouring if you choose and mix. Use an icing bag or icing tool to ice your cupcakes. Enjoy! My favourite food of all time and food that I cannot live without is Indian food. I grew up in England eating it all the time and I loved it as a teenager and still do. When we order take out for Indian I don't get the utter chicken anymore or the masala because of the thick creamy sauces so we get the dry marinated chicken which is amazing.
