Summer is finally here and that makes me happy! I never liked granola bars especially the ones like nutrigrain bars. I don't know what it is about them I just don't like them, but I do like fruit and nut bars. When I saw the ingredients that most fruit and nut bars have in them it was insane, so I made my own and took out everything that I had in my cupboard that looked good for a fruit and nut bar. These bars are so good and sweet from the dates and fruit and a little nutty from the cashews and pecans. I am in love with these bars and i know you will like them too. I have to make another batch because the first batch went so fast. Give these a try and see what you think.

This fruit and nut bread is perfect for breakfast, snack or a quick lunch. I was craving this bread and i am so happy with how it turned out, I cant stop eating it. This is a gluten free refined sugar free, wheat free and dairy free bread just like all my other recipes on my blog. I hope you try this bread and let me know how it turns out for you. Everytime I make pizza crust I seem to do something different just so I can make it a better recipe. I wanted something for lunch today but I didn't know what and I was looking through my freezer and throwing some old food away that was freezer burnt and came across mini pizzas. I then knew what I wanted to create for lunch. I rarely used tapioca flour but recently I have found I am adding a bit here and there in batters and pizza dough. I don't use it in muffins or my other baked treats. It gives the good a more bread like Taste and a little fluffier if that's the right word. When I made these I used my pizza crust recipe that's on my blog as a guideline, I was going to just half the ingredients but I added the tapioca flour as an extra ingredient. You can add anything you like as a topping even cheese of you can tolerate it, just cook the toppings before you put them on the pizzas.
1 cup of almond flour 1/4 cup of coconut flour 1/4 tsp of baking soda 1 tbsp of cold water 2 tbsp Of palm shortening 2 tsp of apple cider vinegar 1 tsp of oregano 2 tbsp of tapioca or arrow root flour Use the dough attachment if you have a stand up mixer. Preheat oven to 350. Line a cookie sheet with parchment paper. Add the ingredients in order in the mixer and mix until combined. It will look a little crumbly until you add the water then It will look like soft dough. If you need to add a little more water you can do that. This dough is very easy to shape and hold together. Take a handful amount of dough and roll into a ball, actually you can make the pizzas any size you want but for mini ones I rolled a medium sized ball. Flatten in your palms and lay them on the baking sheet. With your fingers knead the dough into a pizza shape with a bit of a lip around the edge to form a crust. They will look like little shallow bowls. Cook in the oven for 15-20 minutes or until they are a slight golden brown. In the mean time you can cook your toppings and make your sauce. I have a pizza sauce recipe on my blog if you need one. If you put cheese on top you can place back in the oven for a minute. Enjoy! This is amazing my friends! Such a delicious batter for fish. My Husband caught some perch while ice fishing this winter so I took some out of the freezer to defrost. I needed a batter because we used to use fish crisp but I wanted a wheatfree kind so I came up with one of my own. You can really add any spices you want to the batter and can even make it a little spicy if you like.
1 cup of tapioca flour 1 1/2 tbsp of coconut flour 1 tsp oregano Pinch of salt and pepper 1/2 tsp of garlic powder 1/2 tsp of onion powder 3/4 cup of almond milk 1 egg About 4 cups of oil I use light tasting olive oil to fry with Any type of fish Have three bowls ready. Pour your oil into a deep large pan let heat on medium slowly. In one bowl add half the tapioca flour. In the second bowl add the egg and whisk. In the third bowl add the other half of tapioca flour, coconut flour, spices and almond milk. Whisk well until combined. If the batter needs a little more almond milk then add that too, it should be thick liquid. Dip the fish fillets one at a time into the dry tapioca flour then egg then batter. Do this for all the fillets and then dip one slowly using a ladle or fryer spoon into the oil that should be bubbly. Dip as many as you can fit into the oil. Let cook until the batter is crispy and golden brown. Spoon each piece out carefully and lay on paper towel on a plate to soak up any excess oil. Be very careful with hot oil around anyone or children. Make sure the oil pan is at the back of te stove. When all he fish is cooked turn the heat off and let the oil cool. Serve with a slice of lemon and chips. Enjoy!!! I have been meaning to write about my acupuncture experience, but I've been so tired lately I haven't been able to sit down and think about it. I thought id let you know a little about what the experience was like especially if you are considering acupuncture treatments and have never done it before. I am not a doctor and I am only sharing my experience on my blog for you to read. Everyone is different and everyone will have different or similar experiences. My appointment wasn't dramatic or have anything happen that was something to pinpoint and remember, but for someone like me who had never thought of acupuncture before I was extremely nervous which doesn't help with diarrhea. I had always pictured these long needles sticking out of my body, I swear they make them look long in the movies. I waited for my appointment in the waiting room very nervously and when I was called in I spoke to the doctor and we realized I hadn't eaten. I didn't know I had to eat something before the appointment so that i wouldn't feel sick afterwards. I had a cookie and apple juice which seemed to satisfy my tummy. I lay on the bed on my back and I was so nervous but I started to relax when the doctor talked to me and told me exactly what she was doing and where the needles were going. I lay so still I didn't want to move a muscle in case I moved a needle. I had one in my head, arms, knees, feet and ears. As I lay there for twenty minutes my body started to relax and I started praying for healing and I began to close my eyes. I haven't mentioned this but in all my life with appointments like massage therapy I have never closed my eyes because I was always so tense and worried id have to run to the bathroom. I actually closed my eyes and almost fell asleep and felt so relaxed more than I ever have. I felt great! I took a little peek at the needles in my arm and to my surprise they were tiny, there goes my whole movie idea, I was quite relieved. When the twenty minutes was up the nurse came in and took out all the needles, I think there was 14. Let's just say I felt tired after and made sure I relaxed that night. The day after I noticed my knees felt much better as I had a lot of joint pain in them for three weeks so for me my first treatment of acupuncture had great results. My second appointment this past week was a little different, I have had diarrhea everyday and this day was one of the worst and again I was super nervous for my acupuncture treatment and I even told the doctor how I was feeling. They left a bell so I could ring if I needed help. I was tense during this one because I was so worried about going to the bathroom so I wasn't quite relaxed but felt tired later on. I know it'll take time for results and I am happy to go to the treatments until then. I hope this has helped you and again I am not a doctor but just sharing my own personal experience with you. I hope you enjoyed your Easter weekend as much as I did. Getting together with friends and family does wonders for the soul and helps with relationships all round. I've been researching lately on de stress tips and what can help with emotional wellness. For me as a Christian I pray for God to calm my mind and ease my stress and I also take breathing techniques into consideration especially when I'm about to have a bathroom run and I am out of the house. Just yesterday I was in my acupuncture appointment and I had to run to the bathroom a few times. I get very nervous going to appointments for this very reason, but I started to take deep breaths in through my nose and out through my mouth. I was alone in the room so no one was watching me thank goodness or they would have thought something was seriously wrong. In my mind something was wrong as I was about to have needles placed all over my body and the thought of having sudden diarrhea made me super nervous, so I prayed that it would go away just for that twenty minutes treatment. So breathing is a big part of de stressing oneself and can be very helpful for many people. I learnt about breathing in my yoga class with my Daughter and I found it was such a great tip for me and works which is even better. Another tip for de stressing is walking, I find when I'm walking around or taking a walk outside I start to become calm and when I'm not thinking about what was stressful in the first place my stomach relaxes and my mind relaxes and I pray for positive thoughts and that things will work out. I am not a doctor but just sharing my experience with what works best for me when stressful times occur, which happens in everyone's life. If something is stressful to you the best thing to do is to remove what that stressor is. If it's work then you need to make a change in the workplace, take walks at lunch or on break, find a quiet area to eat lunch and gather your thoughts and start to think positively. What can you do to help things de stress? Maybe a little yoga or stretching in the employee room or stretching at your desk may help. I find my mood changes with diet as well, certain foods make me sick and sluggish which in turn affects my mood so think about what you are eating. Taking time for yourself should be a priority and if it's not then make it one, even a hot bath with Epsom salts can ease your mind and body or drinking a herbal tea to relax you can be big factors in calming down. These are all things that I have just started doing this year so I am learning as I go along to find the right wellness tips for me.
