Good evening everyone! I have been up all night well most of the evening working on my blog to make it easier to navigate for viewers. It takes forever let me tell you. Now for some reason I cannot get rid of the "more" title, it is not more recipes it is just the long list of recipes that I have organized under the recipe page. This new recipe page will help you navigate through my blog and find what you are looking for as well as the search button. I want to make things much easier for you. I hope that it helps. I am still working on the recipe page and adding each recipe to it, I am getting there don't worry. I have some new recipes I am in the middle of posting, but I thought I would share the main one that some people would like to make and that is the paleo pizza pockets. They are the best for lunch for the family. Before I share the recipe I thought I would update you on my health. I received my second infusion of Remicade last week and it went well. However I have gotten headaches both times for about 3 days after. This time was the worst for headache's and I'm not liking it because I don't like to take tylenol everyday, but I have to as I need to take care of my family. Hopefully this doesn't happen every time. My bathroom visits have decreased which is great, I just get one major run a day so compared to five runs a day I'm getting better. Onion rings are the best but not regular onion rings with wheat flour!!! These are the best ones ever!! They don't make me feel sick and they are absolutely amazing!!!! You have to try them. You must!!! Click on this link to try my wheat free, coconut free, grain free and dairy free onion rings. I have been working all evening on posting all the recipes that I got behind on. So I have posted Christmas cinnamon rolls, Dinner roll biscuits and peppermint patties. Today my son and I made some gummies, we made starfish, fish, bunnies and some flower gummie's for his Sister's. I have made gummie's over the months and they have not turned out or recently they turned out okay but squishy and not gummy like at all. So tonight I thought I would actually put some effort into measuring the ingredients and make it right, especially when my 3 yr old Son expected gummies. So here goes the recipe. I hope they work out how they worked out for us.
1/2 cup and 1 tbsp of cold water 3 tbsp of gelatin 1 cup of juice ( any kind of juice you like ) 1 tbsp of honey Place the juice and honey in a saucepan and heat on low. In a separate bowl pour the cold water and sprinkle the gelatin over the top. Actually sprinkle it on so it doesn't clump. The gelatin will start to work for about 5-10 minutes. It will turn into jello. Place the gelatin mix into the juice. Whisk lightly right away so there aren't any clumps and it will melt in with the juice. Pour very carefully into the molds. Becareful because it will be extremely hot. Don't let children do this part. Place in the fridge for an hour or more and they will turn out perfectly for you. I bought the molds at ikea. Good evening everyone! Well this has been a busy day for me running to and from doctors appointments and looking after my sick baby. Layla is getting better thank goodness. She had a horrible cough and cold. Anyway, This morning before all the busyness had begun I got an idea to make Christmas swirl cookies and I made them right away. They tasted great and very soft and chewy but they are not how I wanted them to look. Their presentation was not going over well with me, but I posted them anyway on instagram because they tasted good and looked so fluffy in the inside. I would like to make them again and see how I can make the swirl tighter and flatter, however a few people on Instagram asked me to post the recipe and I asked them again if they are sure and they said yes. So I am sharing the recipe here on my blog comments but I wont post it yet on my recipe feed until I can figure a few things out. I used my thumbprint cookie recipe for these swirl cookies and they tasted great.
1 egg 1 tsp of vanilla 1/3 cup of honey 1/3 cup of melted palm shortening ( its ok if there are a few unmelted lumps) 4 tsp of coconut flour 1/2 tsp of baking soda 2 cups of almond flour 1 tsp of cinnamon Green gel food colouring, not the liquid. a pinch so use a toothpick. You can add more for a darker green Preheat the oven to 335f. Place a heat proof dish full of water on the bottom rack of the oven while it heats up. Line a baking sheet with parchment paper. Beat the egg. Add the vanilla and mix. Add the honey and mix well again. Pour in the melted palm shortening and mix really well. Add the almond flour and mix again until combined. Scrape down the sides and mix. Add the baking soda and coconut flour while the mixer is on. It should look like dough. Let the dough sit for a few minutes to let the coconut flour settle. When I make them again I am going to try placing them in plastic wrap and then in the fridge for an hour, but I didn't do that this time. Half the dough. Take half the dough out of the mixer and place on a sheet of parchment paper. With the dough in the mixer add the food colouring and cinnamon and mix well until you see a shade of green. With the dough on the paper, place another sheet on top. Roll the dough out so that it is a good thickness but not too thin. Do the same with the green dough. Flip the green dough on top of the plain dough. Use a pizza cutter to make a perfect rectangle. Slide the parchment paper with the dough on it to the edge of the counter. pull the paper over the dough slightly so that the dough starts to roll. You will probably need to help the dough roll by rolling with your fingers carefully. If the dough cracks just patch it up by pressing into the dough. Slowly roll the dough into a somewhat tight log. Use a knife or pizza cutter to slice the roll into cookies. Place on a baking sheet lined with parchment paper and cook for ten minutes. I will most definitely be making these again and improving any flaws I find. Enjoy and have fun making them, they do taste yummy! New recipe just posted for Paleo pop tarts. These tarts are amazing. Christmas is approaching and I decided to make some jam thumbprint cookies this morning and good thing I did because they turned out amazing! Well the first day after my first infusion of Remicade I felt awful, I have to be honest because this is my journey with crohn's and I want to share with you my experience. The second day was a rough day, I had no motivation, no energy and my back pain felt intensified. I was very tired and actually a little low. I say low because my mood was down as I am usually a busy person and not having motivation bothered me. On the third day which was yesterday I had a slight headache which I could not get rid of. Now I don't know if any of these symptoms are side effects or reactions to the remicade as this would be my first time on it. During this week I have had diahrea every night, again not sure if this is from the remicade or just a bad relapse. today I feel I have motivation back and I am still going to take it easy. I am giving the medication a chance to work. so that's my experience with this this week and I hope that it will work soon and I will feel good for once. My next infusion is in two weeks so I shall see how that goes too. I am not a doctor or specialist I am just blogging about my own personal experiences to share with you.
It is November 4th and I thought I would blog my experience with my first infusion of Remecade which I had yesterday morning. My appointment was early in the morning and I was extremely nervous, I'm nervous about a lot of things but this was scaring me. You have to understand I haven't had medication like this for my Crohn's ever!!! In 2008 right before my surgery I was taking two medications and I was only on that drug for two months, the steroid I was on for longer. Worst drug ever! I had awful nightmares and swollen face, I wanted off of that steroid asap. Well as soon as the surgery was done I had to wean off of the medication once that was done I said I'm not going on any other medication. Well now I am at the point where I can't live like this anymore, not only has having diahrea daily intefered in my life it has lowered my confidence a lot. I am always afraid of going to peoples homes in case I have diahrea, so I end up not going. Yesterday was a big day for me, I finally agreed to doing something more than diet to help myself. Don't get me wrong the Paleo way of eating helps my bloating in a major way and my overall feeling. If I eat too much gluten I end up looking pregnant and I feel yucky so I try my hardest to stick with my healthy and gluten free eating. However, its gone as far as it can go and I am still sick so it came to making the decision to try Remecade. When I showed up at the clinic I'm sure they could tell I was nervous. It turned out okay. I sat for 3 hours while they hooked me up to iv and the medication began. I did have a little headache afterwards and felt drowsy but I didn't notice any difference and I won't yet. Today I am tired and mostly because I had awful upset stomach today. Hopefully it all gets better for me. So I will keep blogging my experience with these infusions and let you know how it goes for me. Thank you for reading and your support in my journey.
