I don't usually like chocolate chip cookies, only because I have never liked chocolate but since starting this diet I actually like it now and really love these cookies.
1 egg
1 tsp vanilla
1/4 cup of palm shortening, melted
1/2 cup of honey
1 1/2 cups of almond flour sifted
2 tbsp coconut flour sifted
1/4 tsp baking soda
pinch of salt
1/3 cup chocolate chips dairy free, (mini size )
Preheat oven to 350'. Prepare baking sheet with parchment paper. Add egg to a stand up mixer and mix well. Add the vanilla and honey and mix. Add the sifted flours and baking soda, mix well. Add the salt and chocolate chips. Combine all ingredients and use a spatular to scrap down the sides. Let sit for a minute just so the ingredients can sit. Spoon the mixture into small balls on the baking sheet and flatten each one. Place in oven and time for 12 minutes. Depending on your oven keep an eye on the cookies so they are done how you like them.
