These cookies are perfect to make for school or if there is a nut allergy in your family and even more perfect with your favourite icing. ( which I have to still create an icing recipe ). Try these cookies out they are easy to make and taste good.
1 egg
1/4 cup of honey
1 tsp of vanilla extract
1/3 cup of melted palm shortening
3/4 cups of coconut flour
pinch of salt
1 tsp of baking soda
Preheat the oven to 350. Beat the egg in a stand up mixer or hand held beater. Add the honey and mix. Add the vanilla and mix again. Add the melted palm shortening and mix well. Add the coconut flour, salt and baking soda and mix really well until all is combined. The mixture should look like cookie dough now. Place a sheet of parchment paper on a cookie sheet and roll the dough into small balls and flatten with your palm. Place each cookie on the sheet and place in the oven for 8 minutes or until slightly golden brown. Let the cookies cool once you take them out of the oven. Use your favourite icing or topping. enjoy
