These apple cinnamon muffins are so good and perfect for breakfast snack. This recipe is nut free so my kids and I can take these to school. Hope you enjoy them. I used apple flour from antigrainfoods
2 eggs
1tsp vanilla extract
1/4 cup of palm shortening melted
1/2 cup Of honey
1/2 an apple diced into small pieces
1/2 cup of coconut flour
1 tbsp of apple flour
3/4 cups of apple sauce unsweetened
1/4 tsp of baking soda
1 tsp of cinnamon
1 tbsp of coconut sugar
Preheat oven to 350f. Place the eggs in a stand up mixer and beat on low. Add the vanilla and honey and mix. Add the melted palm shortening and mix. Add the apple pieces and mix. Add the coconut flour and mix well. Add the apple flour and apple sauce and mix well. Add the cinnamon and baking soda and mix well. Spoon the mixture into each muffin tin and level it off. Sprinkle the coconut sugar on top of each muffin. Place in the oven for 25 minutes or until cooked thoroughly. Enjoy
