This morning I felt like meat, taco ground beef and I just so happened to have some that I defrosted yesterday and came up with this recipe. It was so delicious and hit the spot. You can also use left over ground beef from the night before if you happen to have any. I love Mexican food so this breakfast was perfect and I just loved it. You can put less chilli in it if you don't want it too spicy.
3 eggs
1lb of ground beef
2 tsps of chilli powder
1 tsp cayenne pepper
pinch of salt and pepper
1 tsp oregano
1 onion, sliced
1 tbsp of water
1 avocado, sliced
3 small vine tomatoes
Cook ground beef in a frying pan. Add the spices and salt and pepper. Add the water to the beef and stir until the spices are combined. Cook the eggs in a separate pan, careful not to break the yolks. Slice the onion and cook with the beef. When both eggs and beef are cooked, Place the beef mixture into a round dish and place the eggs carefully on top of the beef. Top with the tomato and avocado and sprinkle a pinch of salt and pepper on top and serve.
