I loooove minestrone soup especially on a cold rainy day. It is a warm comforting meal and easy to make. I decided to cook this in the morning in a slow cooker so that all the prep work was done and dinner would be ready by the evening and I love that feeling. Once I get back to work I'll be making lots of slow cooker meals. So here is the recipe for my minestrone soup.
Half a head of broccoli
half a head of cauliflower
half a yellow or green zucchini, diced
1 sweet potato, diced
1 stalk of celery
1 1/2 cartons of organic chicken broth
1 can of tomato sauce or diced tomatoes
4 fresh leaves of basil
2 tsps of Italian herbs
1 tsp of oregano
pinch of salt and pepper
2 cloves of garlic crushed
1 onion diced
Dice all your vegetables and place all the ingredients into the slow cooker. Stir. Program the cooker to low for 7 hours. Turn onto high half way. Serve and enjoy.
