These carrots are to die for. Absolutely delicious and I want them all the time. I was looking for rainbow carrots for a while and finally found them at the farmers market. I decided to make a sauce to pour over the carrots and bake them and it turned out awesome. Hope you enjoy them.
10 carrots different colours, sliced and quartered
1 tbsp of dijon mustard
1 tbsp of honey
1 tsp of apple cider vinegar
2 tbsp of light tasting olive oil
Preheat oven to 350'. Mix the sauce ingredients together. Pour over the sliced carrots and bake at 350' for half an hour or until desired softness. Serve as your side.
