I have to say this is an amazing lasagna, and that is because I have made paleo lasagna noodles. I tried eggplant and other veggies to imitate noodles and it was good, but this time I love this meal. I felt great because I knew it didn't have tomatoes in and I wouldn't be paying for it the next day. If you can tolerate tomatoes, by all means add your favourite tomato sauce. I will be eating tomatoes in six months for sure. I will also be adding my homemade tomato spaghetti sauce to my blog, this is a recipe I make my family. So here is the lasagna recipe.
Noodles
2 eggs
1/3 of a cup of tapioca flour
1 1/2 cups of almond flour
1 tbsp of coconut flour
Meat sauce
1lb of grass fed ground beef
2 red peppers, chopped large
1 yellow pepper, chopped large
1 tbsp of fresh or dried basil
1 tsp of Italian herbs
1 tsp of oregano
pinch of salt and pepper
1 onion, diced
2 cloves of garlic, crushed
1 cup of spinach
1/3 cup of chicken broth
Preheat the oven to 350F. Add the ground beef to a frying pan with the onion and garlic. Cook the beef until it is brown and cooked through. At the same time fry the peppers in a separate pan until they are soft. Let the peppers cool. Add the peppers to a food processor and blend on low. Add the chicken broth to the pepper sauce and mix again. Pour the pepper sauce into the beef and mix with a wooden spoon. To make the noodles beat the eggs in a stand up mixer. Add the dough attachment to the mixer. Add the almond flour and mix. Add the tapioca flour and coconut flour and mix well. The mixture should look like dough. With your hands roll the dough into a ball. Place a sheet of parchment paper on a flat surface and place the dough on top. Place another sheet of parchment paper on the dough and with a rolling pin roll the dough out so that it is quite thin, same thickness as actual lasagna sheets. slide the parchment paper with the rolled out dough onto a baking sheet. Cook for 7 minutes. The dough should not be brown but slight light golden colour. Take the dough out of the oven and with a pizza cutter slice the dough into noodles. There should be six noodles. Spoon half the meat sauce into a 9x9 oven proof dish. Place three noodles on top of the sauce. Pour the rest of the sauce on top and another layer of noodles. Place the spinach on top and put it in the oven for ten minutes. Take out of the oven and serve.
