After cooking my Mum the stuffed portabella mushrooms I needed a quick and easy dessert and I thought of these strawberries. They were so good and easy to make. Strawberies are another of my high food sensitivities, along with the rest of my list it is very hard for me to keep away from the staples in this house. I try not to eat strawberries but it gets difficult at times. I hope you enjoy these as much as we did.
10 strawberries or as many as you like
Half a can of coconut cream
1 tbsp of cocoa powder
1 tbsp of honey
1 tsp of vanilla extract
Whip the coconut cream in a stand up mixer. Add the cocoa powder, honey and vanilla. Mix well and scrape down the sides with a spatula. Use a sharp knife to slice the tops off the strawberries so they stand up flat. Make an X in the other end of the strawberry and open it up. Use a teaspoon to pour the chocolate cream into the strawberry and there you have it. Enjoy
