These are the best onion rings I have ever tasted. Whenever I have had onion rings in the past they always weighed my belly down and made me feel awful afterwards, but these are perfect and taste perfect. My Husband said they are the best hes ever had. You have to have to try these.
2 onions
2 cups of arrowroot flour
1 tsp of baking soda
pinch of salt
1/2 cup of almond milk
2 eggs
2 cups of light tasting olive oil for deep frying or any oil you prefer to use.
In a large pot or deep fryer heat the oil up on medium heat. You need three bowls. Place the 2 eggs in one bowl and whisk. Place 1 cup of arrowroot flour in another bowl and 1 cup of arrowroot flour in another bowl. In one of the arrowroot flour bowls add the almond milk and whisk so that it looks liquidy. Take the whole onion and slice it into just under 1/2 an inch rings. Once sliced you will push the middle out and then each ring will pop out. Dip an onion ring into the egg mix, then dip into the arrowroot flour then arrowroot flour and almond milk then arrowroot flour again. Do this with all the rings. Use tongs or scoop to place the rings into the preheated oil. Make sure your using a back burner to keep away from the edge and children are out of the way. It doesn't take long for the onion rings to cook so as soon as you see them browning slightly you can scoop them out and place on a paper towel to soak up any oil. Serve with my homemade ketchup or your favourite dip.
