I need lots of variety for when I go back to work and that means nut free for my Daughters school lunches and mine. So I came up with these cookies and they are really tasty. Funny thing is I forgot to put baking soda in them, but they turned out amazing. I will however try them again with baking soda and see what happens but for now these cookies are the best.
2 eggs
1 tsp of vanilla
1/2 cup of honey
1/4 cup of palm shortening melted
1 tbsp of poppy seeds
3/4 cups of coconut flour
juice of 1 lemon
1 tbsp of boiling water
Preheat the oven to 350. Beat the eggs in a stand up mixer. Add the vanilla and mix. Add the honey and mix again. Add the melted palm shortening and blend again. Pour in the poppy seeds and mix. Pour the lemon juice in and mix well. Add the coconut flour and mix again on low, but scrape the sides down with a spatula until the flour is mixed in. Add the boiling water and mix well. The mixture should be thick and look like dough. Line a baking sheet with parchment paper and roll the dough into small balls. Place the balls onto the sheet and use a fork to flatten them. I slid the fork off the cookie so that it wouldn't stick. Place in the oven for 14 minutes or until slightly browned. Let cool and serve. Makes 18 cookies.
