Good morning everyone. Today is a rainy day and I am trying not to feel gloomy. I have been very busy these past couple of weeks with organizing our home and rearranging rooms and coping with a loss in our family and a busy life. I still try to find time to post recipes and cook and not fall into eating foods I shouldn't eat, but at times it does get hard and tempting and in the end I pay for it. Recently I have added coconut macaroons, comforting chilli for those gloomy days, marinated beef stir fry and tips to keep the beef tender to my blog for you to make and enjoy. My go to snacks if I want to just snack for the sake of snacking for comfort is Lara bars, right now my favourite are the peanut butter kind and the apple pie. They are so good and filling. I will continue to add more recipes to my blog, I try to create foods that are different and not usually made in the paleo world, because those are the foods that can be difficult to replicate and the ones we enjoy the most. I also find that I am gaining a collection of small appliances for this health plan we are on and I'll go to make something and I say " oh I need a waffle maker" or "oh i need a veggie spirilizer" and next thing you know you have no room for anything. Key thing is if you need to buy a small appliance but don't want to spend the money, buy the cheaper version and save up for the more expensive one later on. I never buy the expensive appliances because one I don't have the money and two I find the cheaper ones work really well. So do whats best for you and make sure your enjoying what your doing. I am going to attempt to create some sort of pie today and I'm thinking lemon meringue. Have a lovely day everyone.
