I bought popsicle holders from ikea the other day and now I am obsessed with popsicles, all different kinds. My kids are loving this new popsicle stage I'm going through. I was going to wait until later to put the recipe on but today is going to be a really nice sunny day so I am putting the recipe on now while I make breakfast because this is a must eat today recipe. The raspberries at the top are just raspberries with nothing added, they have a tart taste to them which I found mixed very well with the chocolate on the bottom, if you prefer it to be sweeter you can add a tsp of honey or a very small amount of your favourite sweetner to the raspberry mixture. I will say because I didn't add anything to the raspberries I don't know what it would taste like with a sweetner, so you can always try it out and see if you like it. Enjoy your day today everyone.
1/2 cup of raspberries
For the chocolate part
1 cup of chocolate chips ( I use the mini enjoy life brand dairy free)
1 can of coconut cream
1 tbsp honey
1 tsp vanilla
Blend the raspberries in a blender. Pour the raspberries into your popsicle holders, about a 1/4 of the way. Place in the freezer without the lids on. Leave in the freezer for about 20 minutes or until they are half frozen. Don't let the raspberry mixture freeze completely. Place a saucepan on the stove filled a third of the way with water. Simmer the water but do not boil. Place a heatproof bowl on top of the saucepan. Pour the chocolate ingredients into the bowl and stir until its mixed in. Let the chocolate mixture melt. Once the chocolate has melted, carefully with gloves on take the bowl off of the pan and be careful of the steam that rises from the water. Let the mixture cool a little. Take out the raspberry mixture that is in the freezer and pour the chocolate mixture into each holder ( not the top because you need the handle lid to fit in without it pouring over). Place in the freezer for at least 3 -4 hours. When they are ready to be eaten you can run them under warm water and they should slide out of the holder and they are ready to eat. Enjoy.
