This is a fun time of the year Halloween. Time to dress up, pumpkin pick, carve pumpkins, trick or treat and make Halloween treats such as decorative cookies. I came up with this sugar cookie with my Son Owen, he had lot's of fun making them and of course eating them too. I am very happy how the icing turned out and it is perfect texture to spread on to each cookie. You can use any type of food colouring you prefer, I used Wiltons gel icing as it is what I had on hand and I also like the gel because it doesn't make your icing runny like the liquid food colouring. You can use this cookie recipe and icing recipe for any type of cookie shape you want to make. If you use eyes I used the sugar eyes and on another spider cookie I made eyes out of rolling the icing I had made. Makes 30 cookies
Cookies
2 eggs
1 tsp of vanilla extract
1/4 cup of honey
1/4 cup of melted palm shortening
2 1/4 cups of almond flour
2 tbsp of coconut flour
pinch of salt
Icing
1/2 tsp of vanilla extract
5 tbsp of coconut butter
1 1/2 tbsp of honey
Gel icing ( optional )
Preheat the oven to 350. Beat the eggs in a stand up mixer. Add the vanilla and mix. Add the honey and mix again. Add the melted palm shortening and mix again. Add the almond flour and mix. Pour in the coconut flour and salt and mix well. Scrape down the sides of the bowl if needed. The mixture should look like dough. Using your hands roll the dough into a ball. Place a sheet of parchment paper on a flat surface and place the ball of dough on top. Place another sheet of paper on top of the dough. Use a rolling pin to roll the dough out to a thin to medium thickness. Use cookie cutters to cut out the shape you want. Tear the rest of the dough away and you can use it to keep making cookies. Place a piece of parchment paper on a baking sheet. Place your hand underneath the paper that the cookies are on to peel them away from paper and place them on the baking sheet. Spread them out. Place in the oven for four minutes. Take them out and flip over each cookie with a spatula and cook for another four minutes or until a slight golden brown. Let them cool once they are done. When you make the icing make sure you make it when your cookies have cooled down so that the icing will be smooth. To make the icing melt the coconut butter and honey in a bowl in the microwave for 25 seconds or until melted. Stir. Add the vanilla and stir well. I used a plastic knife to stir the icing and I used the same knife to paste it onto the cookies. Once they are ready you can colour your icing any colour you want and then spread onto your cookies. Serve and enjoy.
