Ok so I wanted peanut butter last night and I know peanuts aren't paleo but sometimes PB is a must!!! You can try using almond butter, I haven't tried it so I don't know how they would turn out but I don't see it going wrong if almond butter has the same texture as peanut butter, so if you want to try that go for it. This recipe I will post to my recipe page but for now it's right here. 1 egg 1/3 cup of palm shortening 1/2 cup of peanut butter 1/4 cup of honey 1 1/2 cup of almond flour 1 tbsp of coconut flour 1/2 tap of baking soda Preheat oven to 335. Beat the palm shortening in a mixer till smooth. Add the honey and mix well.add the egg and mix well. Add the peanut butter and mix. Should look smooth and whipped. Add te almon flour and mix. Add the coconut flour and baking soda and mix really well. Scrape down the sides. Roll the mixture into small balls and place on a baking sheet lined with parchment paper. Place in the oven for 10 minutes. Let cool and enjoy. So I tried my hand at some AIP cookies but I think the Enjoy Life brand of chocolate chips maybe not AIP. These cookies however are nut free, egg free, gluten free, wheat free, grain free and dairy free. Here is the recipe below. 1/2 cup of palm shortening 1 tsp of vanilla extract 1/4 cup of honey and 1 tsp 2/3 cup of coconut flour 1/2 cup of chocolate chips ( enjoy life brand) 1 tsp of coconut oil Preheat oven to 335. In a stand up mixer beat the palm shortening until smooth. Add the vanilla extract and beat. Use a spatula to scrape down the sides and mix again. In a saucepan pour some water half way up. Place a heat proof bowl on top and pour the chocolate chips and coconut oil in it to melt. Add the honey to the mixer and beat on medium speed until creamy. Again use a spatula to scrape the sides. Add the coconut flour while the mixer is on. Pour in the melted chocolate chips and mix really well. The mixture should look creamy and thick, almost like icing and not like dough. Use a spoon to dollop the mixture onto a baking sheet lined with parchment paper in small circles. Place in the oven for 10 minutes. When you bring the cookies out let them cool on the tray first then transport them to a cooling rack. Enjoy. I never really thought about essential oils before and even if I had I didn't think they would work, yes I was skeptical. I had a cold last year and my friend had sent me a cold blend to use but because I was skeptical I didn't even bother trying. This year I had a cold so bad I thought I couldn't breathe. It was probably the worst cold id had in a long time. I was desperate so I thought of the oils I had and decided to try them. Oh my goodness did they ever help and I regret not using them before but that's ok I know now that they work and I am all for essential oils. My friend then sent me a breathe oil that worked immediately and also helped my Husband breath better with his asthma. So we have become do terra essential oil lovers. The oils above are a stress blend, headache blend which I tried today and worked perfectly and the crohns blend I am trying tonight. The crohns one is really important to me as I really want it to help my tummy. So I will keep you posted on my little oil journey and let you know how they help me. The icing was a cream cheese recipe that I used to use all the time but you can use my icing from my lemon cupcakes recipe minus the lemon. Hot cross buns, hot cross buns!! These are so good and perfect for a quick breakfast, on the go snack or lovely alongside tea. I want these right now actually.
