This meal was a throw it all in meal, whatever was in my fridge I put in, but this recipe turned out really good so I wanted to share it with you. The noodles are very easy to make if you have a spiralizer. I have the Paderno brand and I love it, it holds up amazingly even when I thought it would break with the largest of vegetables. Hands down the best. I haven't used another brand but I am not spending a fortune on one and this was a really good price. You can add any vegetable you want to this recipe, I just added what I had in my fridge at the time.
1 large sweet potato peeled
small bunch of asparagus
1/2 a zucchini sliced
2 tomatoes diced
1/2 a red onion diced
2 cloves of crushed garlic
pinch of salt and pepper
2 tbsps of apple cider vinegar or red wine vinegar
1 tsp of ginger
Cut your potato in half. Spiralize your sweet potato according to manufacturers instructions. Place all the vegetables and garlic an onion in a frying pan. Add the ginger and vinegar. Cook until the vegetables are soft. Fry the sweet potato noodles in another pan. Cook them on medium heat until they are as soft as you want them. I left them a little crunchy but that's how I like them, you can saute them longer though. Place the noodles in a bowl and top them with the vegetables.
