Finally got to post this yummy recipe. I feel I need something to snack on now and again and these chewy bars are perfect for snacking, and when I don't have a dessert planned and I'd like something sweet, I can bring out these bars quick and easy. They are nut free so its perfect for me to send to school with my kids and I can eat these at my work when I return from mat leave. This is a very simple recipe so try your hand at it and enjoy.
1/3 cup sunflower seeds
1/3 cup pumpkin seeds
1/3 cup dried cherries
1/3 cup of raisins
1/3 cup of dairy free, gluten free choc chips
1 tsp cinnamon
1/4 cup of honey
1/2 cup dates soaked in hot water for 10 min
Pour the sunflower seeds, pumpkin seeds, cherries, cinnamon and raisins into a food processor. Mix on low speed until well combined and small pieces. Add the honey, soaked dates and choc chips and mix on low again. It should start to turn into larger balls and stick together. Once this happens you can stop the processor and spoon the mixture into a dish lined with parchment paper. Make sure the paper hangs a little over each side of the dish ( I use a square 9x9). Use a baking spatula, I use a flexible one so you can flatten the mixture into the corners and make sure its flat on top but thick enough to cut into bars. Place in freezer for 2-3 hours. Once the time has passed take the dish out of the freezer and take the bars out of the dish and onto a cutting board. Here you can cut the mixture into bars. I wrap each one in parchment paper so that I can easily take with me. Store in fridge.
