We don't make pork chops too often in my house, I should say 'I' because I am the one that cooks, but I found some free from pork chops at a good price and thought I'll make these into a great dinner. These pork chops are stuffed with apple and spinach, this makes a good warm home made meal.
3 pork chops
1 cup of spinach
1 apple
2 tsp of Italian herbs
pinch of salt and pepper
1 onion
Preheat the oven to 350'. Slice open the pork chops down the sides to make a deep pocket. Chop the apple up into small cubes in a bowl. Chop the spinach up and add to the apples. Add the herbs and salt and pepper and mix. Stuff the pork chops with the spinach mix, distributing evenly to each pork chop. Use a mandolin to slice the onion in long strands. In a frying pan sauteed the onion until slightly brown. Top each pork chop with the onion and place the dish in the oven for half an hour or until pork chops are thoroughly cooked. serve with your favourite sides.
