I was told by my butcher that the shoulder of a lamb is a little more fatty and to go with the leg of lamb if i wanted leaner meat, which I did and I'm so glad I chose the leg because the meat was so good.
1lb of leg of lamb cubes, you can ask your butcher for the amount you want. i bought enough for 5 kebobs.
1 red pepper, cut in large wedges
1 yellow pepper cut in large wedges
1 red onion cut in large wedges ( optional )
1 zucchini cut in large circles
2 tbsp of fresh mint chopped
1 tsp of chopped fresh rosemary
1/2 a lemons juice
pinch of salt and pepper
Place the lamb cubes in a bowl and add the rosemary, mint, lemon juice and salt and pepper. Cover with cling film and place in the fridge for about two hours or longer. When your ready to barbeque them, Take your metal skewers and slide the meat and vegetables on to them and do this for all your skewers. If your using wooden skewers make sure you pre soak them in water for ten minutes so that they don't burn on the grill. Cook the lamb skewers until the meat is cooked but a slight trace of pink, otherwise the meat will be too tough. Serve with my side of potato salad or asparagus casserole. Enjoy.
