Last summer my Husbands cousin made a snack that were cinnamon chips with fruit and I thought about cottage trips this summer and what I could take there. This snack was perfect and I knew I could make it paleo. It's fresh and tasty and I'm sure you will enjoy it too.
Fruit salad
1/2 cup of blueberries
2 cups of diced watermelon
1 banana diced
1 nectarine
1 tbsp of lemon juice
15 grapes sliced
cinnamon crackers
1 1/2 cups of almond flour
1 tsp of vanilla extract
2 tsp of cinnamon
1/4 cup of honey
2 tbsp of coconut flour
1 egg
1 tsp of cinnamon
2 tbsp of coconut sugar
Dice all the fruit up and place in a bowl, pour the lemon juice over the fruit and place in the fridge.
To make the crackers beat the egg in a stand up mixer. Add the vanilla and honey. Mix well. Add the flours and 2 tsp of cinnamon and mix well. The mixture should now look like dough. Take the dough out and roll into a ball. Place the ball onto a piece of parchment paper and use another piece to place on top. Roll the dough out so its cracker thin but not too thin. Use a pizza cutter or knife to cut the dough into small squares. Mix the 1 tsp of cinnamon and 2 tbsp of coconut sugar and sprinkle half on top of crackers. Slide the crackers onto a baking sheet lined with parchment paper, lay them down with the dusted side down. Sprinkle the rest on top. Place in oven for 8 minutes, turn the crackers over half way. The key to these crackers is not to overcook them or brown them too much. Take out of the oven and let cool and serve with your fruit salad.
